    • Amarone Classico della Valpolicella DOC 2004

      Our Calcarole Amarone is only produced a few vintages a decade and in minute quantities. Calcarole is a “cru” or designated hillside vineyard site that rises above the Villa di Rovereti in the heart of Negrar in the Valpolicella Classico Area.  This vineyard is ideally suited for it’s temperate climate and stony soil.  Sourced from mature vines, the grapes are harvested by hand and picked when they are ripe to perfection. The hand selected grapes are dried on racks and then fermented and pressed.  Our Calcarole spends 36 months in French and Slovenian oak barrels (5 hL and 25 hL) and then up to3 months in the bottle prior to being released. Calcarole Amarone can be cellared for many years. We recommend it to be decanted for several hours and served (16-18° C or 60-65° F) with roasted or braised meat or game dishes such as venison. Other recommend pairings include beef stroganoff, curry based dishes or cheese such as Parmesan.

      Geology: Dark soil on substrate of calcareous rock
      Grape varietals: 85% Corvina, 12% Barbera and 3% Rondinella  
      Vineyard surface area: 5 hectares or 12 acres
      Age of vines: 30 years of age
      Density per hectare: 4,000 vines per hectare
      Winemaking process: Grapes are dried on racks and fermentation in oak barrels
    • Production per hectare after drying: Approximately 50%
      Ageing in cellar: 12 months in 5 hL oak barrels and 24 months in Slovenian & French 25 hL oak barrels and up to 3 months in bottle
      Production: 3,560 750 mL bottles or 583 six bottle cases and 120 1500 mL bottles (Magnums)
      Alcohol content: 16% by volume
      Total acidity (tartaric acidity): 5.85 g/L
      pH: 3.66
