    • Soave Classico DOC 2007

      Soave is one of the world’s most famous white wine growing regions. Our Single Vineyard Costeggiola, hosts its vineyard atop a hillside overlooking the Soave Classico region. This vineyard is ideally suited for it’s climate and stony volcanic soil.  Sourced from only the most mature vines on the Estate, our grapes are harvested by hand and picked when they are ripe to perfection. After pressing, our Costeggiola wine is left to ferment in cement vats and then age in stainless steel vats without the influence of oak barrels. This wine is dry and perfumed, and should be served not too chilled (12-14° C or 54-57° F) with Italian starters, white meats, fresh or smoked seafood, shell fish, goat’s milk cheese or mild curry dishes.

      Geology: Dark volcanic soil with stones
      Grape varieties: 70% Garganega  and 30% Chardonnay
      Vineyard surface area: 15 hectares or 37 acres
      Age of vines: 10 to 45 years
      Density per hectare: 2,500 to 4,000 vines per hectare
      Production per hectare/ acre: 11.5 tons (80 hl) or 5.9 tons per acre
      Winemaking process: Fermentation after pressing of the de-stemmed grapes
      Ageing in cellar: 3-6 months in cement vats
      Production: 25,000 bottles or 4,167 six bottle cases
      Alcohol content: 12.5% by volume
      Total acidity (tartaric acidity): 5.27 g/L
      pH: 3.42
